We recently moved into a new house. Our neighbour Mark is a vegetarian, and lives with his wife and four children. During one of our over the fence conversations he mentioned the monotony of eating vegetarian food. Being Indian, we were quite surprised to hear this. Though we are not vegetarian ourselves, we do eat a lot of vegetarian Indian food regularly. I invited him over for dinner and he happily accepted.

In the few years that I have lived in the UK, I have discovered the love of the Britons for Indian food. When I was training as a teacher at the University of Cambridge, I had the opportunity of visiting schools in the very English Boroughs of Britain. One thing which was common to all these places was that as soon as one stepped out of the railway station the first thing to be seen was an Indian Restaurant. My students had hardly ever seen an Indian, but had tasted a variety of Indian foods.

Agra is well known city in the world, it hosts the most beautiful wonder in the world. Agra is situated on the bank of river “Yamuna” and is 204 km away from the capital of India, New Delhi. Agra is the third biggest city of Utter Pradesh, in northern India.

“Taj Mahal” is the most famous monument in the world. The king Shah Jahan built this for his most beautiful wife “Mumtaj Mahal”. It is one of the three world heritage sites in India and others are Agra Fort and Fatehpur Sikri. Taj mahal is made up of white marble; it is the most fascinating monument of India. Agra is one of the leading tourist destinations in India; tourism contributes a large part in the economy of Agra. It has always been a center of education and learning. In the mughal era, Agra grew as a center of Islamic education. The oldest collages of India the “Agra Collages” was formed as Sanskrit school by Scindia rulers in the year 1823.

And then came the marvelous voyages of Christopher Columbus taking upon the arduous long voyage and Vasco De Gama of Portugal, all because of the lure of rich and vast variety of spices in the sub-continent.

Many people love to experiment with different foods from different cultures and ethnicities. Some people love to go out for dinner and experiment with foods they’ve never had before. Other people like to reproduce their favorite dishes at home. Experimenting with cooking from other regions and cultures can be an exciting and fun process. Many cuisines have subtle differences from region to region. Or sometimes the ethnic cuisines are based strictly on different geographic areas.

Some of the most popular cuisines are Mexican, Italian, French, Greek and Middle Eastern, Indian, Chinese, Japanese, and Thai cuisines. While many people feel comfortable experimenting with Mexican, Italian, or Chinese, few people feel comfortable experimenting with Indian food. Nor do they understand the subtle differences in Indian regional cuisine. Indian cooking is as complex and diverse as India’s geography, climate, religion, and culture.
